Devyn’s Delights is a labor of love between Devyn and her step-mom (that’s me!) April.
Devyn was diagnosed with Type 1 Juvenile Diabetes on June 4, 2009. She had gone to Hawaii with her mom a few weeks prior, and when she returned home she had lost about 15 pounds – so much on a young girls frame! In those days before her diagnosis, we watched Devyn drink tons of apple juice and water, sometimes hiding it in her room, only to complain of constant thirst. Her mood swings were almost unbearable, and with her going back and forth between households, no one knew what we were dealing with.
Eating properly is one of the main components of keeping type 1 diabetes under control. Sending your child to school with the right balance of complex carbs, protein, fiber and fat is crucial to their well being.
We quickly learned when trying to find the right foods to feed Devyn that it wasn’t a low carb thing at all, that sometimes our biggest challenge was getting in enough carbs!
This blog helps our family just as much as we hope it helps others. It keeps us on track and gets us in the habit of planning out her meals in advance.
These recipes are from all over the internet and our own concoctions of food that stabilized Devyn’s blood sugar levels and, just as importantly, delicious!
We welcome your healthy meals too! Send us your delightful recipes and we’ll try them out and post them here!
